DIY Plaster

Hi folks. There's damp under my sink from a previous lazy owner and I'm stripping the plaster and cement off to the bare stone. The wall is external and it seems to be bone dry on the inside. What's the best type of plaster to put on it? Finish wise I'm not overly fussed as it will be under a sink but I don't like having damp with the associated health problems.
It's probably about 1meter wide by about 60/70cm area.

Plasterboard would be quick and easy to fit and you can get moisture resistant stuff too.

Make sure you've got the cause of the damp sussed before re-plastering. Is it an old problem previously fixed, is it a leak in the pipes/ sink/ taps that only shows intermittently (eg. at certain water pressure/ temperature) , or is it the external wall which has poor pointing or cracks which may cause damp when the wind and rain are in a certain direction? When you're sure you've got that sussed then you can re-plaster, otherwise there is no point, you will just have to rip it out and do it all again anyway. Leaving the area for a few days will probably show if you've still got a problem.
